Ingredients
- 1/2 cup natural, unsweetened creamy peanut butter
- 3 tbsp low-sodium soy sauce
- 2 tbsp rice wine vinegar
- 2 tbsp fresh lime juice
- 2 tbsp honey
- 2 cloves garlic, minced
- 1-inch piece of ginger, minced
- 1 tsp toasted sesame oil
- 1/2 tsp red pepper flakes
- 1 tsp Diamond Crystal kosher salt
- 1/4 cup hot water
Combine and Emulsify
The most effective way to make this dressing is in a glass jar with a tight-fitting lid.
Combine all the ingredients in the jar: peanut butter, soy sauce, rice vinegar, lime juice, honey, minced garlic, minced ginger, sesame oil, red pepper flakes, salt, and the hot water.
Seal the lid tightly and shake vigorously for about a minute. The mixture will transform from a thick paste into a smooth, pourable dressing. You may need to open it and scrape the bottom with a spoon once to make sure all the peanut butter has been incorporated, then shake again.
Adjust and Store
Check the consistency. If you want a thinner dressing, add more hot water, one tablespoon at a time, and shake again until it reaches your desired thickness.
Let the dressing sit for about 15-20 minutes for the flavors to meld. Store it in the sealed jar in the refrigerator. It will thicken as it chills; you can thin it with a little water or let it sit at room temperature for a few minutes before using.

Creamy Thai Peanut Dressing

- Add peanut butter, soy sauce, rice vinegar, lime juice, honey, garlic, ginger, sesame oil, red pepper flakes, salt, and hot water to a jar with tight-fitting lid.
- Shake vigorously for 1 minute until smooth and well combined.
- Scrape bottom of jar with spoon to incorporate any remaining peanut butter, then shake again.
- Add more hot water if thinner consistency desired.
- Let rest 15-20 minutes for flavors to meld.
