Creamy Thai Peanut Dressing

This is a versatile peanut dressing that works as a sauce for noodles, a dip for spring rolls, or a dressing for salads. The key to getting a smooth, pourable consistency from thick peanut butter is to use hot water, which helps everything emulsify properly. The easiest way to mix it is by shaking everything in a jar.

Ingredients

  • 1/2 cup natural unsweetened creamy peanut butter
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp rice wine vinegar
  • 2 tbsp fresh lime juice
  • 2 tbsp honey
  • 2 cloves garlic minced
  • 1-inch piece of ginger minced
  • 1 tsp toasted sesame oil
  • 1/2 tsp red pepper flakes
  • 1 tsp Diamond Crystal kosher salt
  • 1/4 cup hot water

Instructions

  • Add peanut butter, soy sauce, rice vinegar, lime juice, honey, garlic, ginger, sesame oil, red pepper flakes, salt, and hot water to a jar with tight-fitting lid.
  • Shake vigorously for 1 minute until smooth and well combined.
  • Scrape bottom of jar with spoon to incorporate any remaining peanut butter, then shake again.
  • Add more hot water if thinner consistency desired.
  • Let rest 15-20 minutes for flavors to meld.

Notes

Dressing thickens when chilled. Thin with water or bring to room temperature before using. Stores in refrigerator for up to 1 week.
