Salsa Verde Turkey Taco Meat

This is a simple weeknight taco filling that comes together in under 20 minutes. The salsa verde does most of the flavor work, so you can use whatever brand you have on hand.

Ingredients (~6 servings)

  • 1 1/2 lbs lean ground turkey
  • 3/4 cup chunky salsa verde
  • 1 1/2 tsp cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 3 Tbsp water
  • 2 tsp olive oil
  • Salt and pepper to taste

 

Brown the Ground Turkey

Heat a large skillet over medium heat and add the olive oil.

Add the ground turkey and break it up with a wooden spoon as it cooks.

Cook for ~8-10 minutes, stirring occasionally, until the turkey is no longer pink and has developed some light browning.

If there’s excess fat in the pan, drain it off – though lean ground turkey usually doesn’t produce much.

Add the Salsa Verde and Seasonings

Reduce the heat to low and stir in the salsa verde, cumin, garlic powder, and onion powder.

Add the water and mix everything together until well combined.

The mixture will look pretty wet at first, but that’s what you want.

Let the meat simmer for ~5-7 minutes, stirring occasionally, until the water is mostly absorbed and the mixture has thickened up.

Taste and adjust with salt and pepper as needed – the salsa verde will provide most of the salt, so start light.

The meat should have a slightly saucy consistency but not be swimming in liquid when it’s done.

  • Add ground turkey and break up with a wooden spoon while cooking for 8-10 minutes until no longer pink and lightly browned.
  • Drain excess fat if needed.
  • Reduce heat to low and stir in salsa verde, cumin, garlic powder, onion powder, and water until well combined.
  • Simmer for 5-7 minutes, stirring occasionally, until water is mostly absorbed and mixture has thickened.
  • Taste and adjust with salt and pepper as needed.
