Stuff You Need
- 2½ pounds chicken wings, cut at joints, wingtips removed
- ¾ teaspoon fine salt
- ½ teaspoon ground black pepper
- 2 tablespoons unsalted butter, melted
- 1½ tablespoons white miso paste
- 1¼ tablespoons honey
- 1 tablespoon rice vinegar
- 1 garlic clove, finely minced
- 2 scallions, thinly sliced
- 1½ teaspoons toasted sesame seeds
Stuff to Know Before Air Frying
I prefer using whole chicken wings and trimming, but presplit wings work too—use 2 pounds to account for discarded wingtips.
This recipe was developed with an air fryer setting on my Oven. Some kitchen models require preheating, but the cook time provided works whether starting from a cold or preheated air fryer.
Prep the Wings
If using whole wings, separate them into flats and drumettes by cutting through the joint; discard the wing tips or save for stock. Pat dry with paper towels and season with salt and pepper.
Air-Fry the Wings
Arrange the wings in an even layer in the air-fryer basket (some overlap is fine). Air-fry at 400°F until golden brown and crisp, 18 to 24 minutes, flipping halfway through.
Make the Sauce
In a large bowl, whisk together the melted butter, miso, honey, vinegar, and garlic until smooth.
Toss and Serve
Add the cooked wings to the bowl and toss to coat evenly. Sprinkle with scallions and sesame seeds before serving.
