Ingredients (~6 servings)
- ~2 lbs baby potatoes, halved
- 1 packet ranch seasoning
- 5 Tbsp butter
- 1/3 cup shredded parmesan cheese (optional)
Get Your Oven to 425F and Melt the Butter
Grab a medium-sized baking dish (like an 8×10″ or similar) and add the butter.
Toss it in the oven for ~4-6 minutes until melted.
Toss Potatoes in Melted Butter
Pull the dish out and add the halved potatoes.
Toss them around to coat in the butter – you want all sides hitting that fat.
Add Ranch Seasoning and Coat Completely
Sprinkle the ranch seasoning over the potatoes.
The powder will clump up at first but keep tossing until everything is evenly coated.
All the potatoes should have a light dusting of seasoning.
Roast for 30-35 Minutes Until Fork Tender
Slide the dish back into the oven.
You’re looking for potatoes that pierce easily with a fork and have some browning on the cut sides.
This usually takes ~30-35 minutes but check them at 30.
Add Parmesan and Serve
If you’re using parmesan, add it now and stir it in while the potatoes are still hot.
The cheese will melt and stick to the seasoned potatoes.
Serve immediately while they’re crispy on the outside.
