Loaded Baked Potato Dip

This dip tastes like all the best parts of a loaded baked potato without having to wait an hour for potatoes to bake. I make it for game day and it's always gone first.

Ingredients (~6-8 servings)

  • 1 1/2 cups sour cream (thick, like Daisy brand)
  • 1 1/2 Tbsp ranch seasoning
  • 3/4 cup shredded sharp cheddar cheese (divided)
  • 6 slices bacon, cooked and crumbled (divided)
  • 1 1/2 Tbsp green onion, chopped (divided)

 

Mix the Base

Combine the sour cream, ranch seasoning, and most of the cheddar, bacon, and green onion in a bowl.

Reserve about 1 Tbsp each of the cheddar, bacon, and green onion for topping.

Mix everything together until well combined – the ranch powder will clump at first but keeps stirring until it’s smooth.

Chill and Top

Cover the bowl and chill in the refrigerator for ~30 minutes.

This helps the ranch seasoning dissolve completely and the flavors meld together.

Right before serving, garnish with the remaining cheddar, bacon, and green onion.

Serve with potato chips, corn chips, pretzels, or waffle fries.

Instructions

  • Combine sour cream, ranch seasoning, and most of the cheddar, bacon, and green onion in a bowl, reserving 1 Tbsp each for topping.
  • Stir until smooth and ranch powder is fully incorporated.
  • Cover and refrigerate for 30 minutes.
  • Top with reserved cheddar, bacon, and green onion before serving.
  • Serve with chips, pretzels, or waffle fries.
