Stuff You Need
- 1 large tomato, chopped
- ¼ medium red onion, finely chopped
- 1 jalapeño (½ finely chopped, ½ coarsely chopped)
- ¼ cup finely chopped cilantro
- 3 tablespoons fresh lime juice
- Kosher salt
- 1 small yellow onion, coarsely chopped
- 5 garlic cloves, coarsely chopped
- 1½ tablespoons extra-virgin olive oil
- 1 pound ground beef (80/20 blend)
- 1 (1-ounce) packet taco seasoning mix
- Cooked rice, sliced avocado, tortilla chips, shredded lettuce, and lime wedges (for serving)
Make the Salsa
In a small bowl, toss together the chopped tomato, red onion, jalapeño, cilantro, and lime juice. Season with kosher salt to taste.
Set the salsa aside to let the flavors meld.
Prep the Aromatics
In a food processor, pulse the remaining jalapeño, yellow onion, and garlic until finely chopped.
Scrape down the sides as needed for an even texture.
Cook the Beef
Heat oil in a medium skillet over medium-high heat. Add the ground beef and cook, stirring and breaking it up, until browned and cooked through, 6–8 minutes.
Add the onion mixture and taco seasoning. Cook, stirring often, until it begins to stick to the pan, 6–8 minutes.
Pour in water, scraping up any browned bits from the bottom.
Continue cooking and stirring until the sauce thickens slightly, about 2 minutes.
Assemble the Bowls
Divide the spiced beef and cooked rice among serving bowls.
Top with sliced avocado, tortilla chips, shredded lettuce, lime wedges, and the reserved salsa. Serve immediately.

Beef Taco Bowl

- 1 1-ounce packet taco seasoning mix
- Cooked rice sliced avocado, tortilla chips, shredded lettuce, and lime wedges (for serving)
Instructions
- Toss chopped tomato, red onion, jalapeño, cilantro, and lime juice in a bowl. Season with salt and set aside.
- Pulse yellow onion, garlic, and remaining jalapeño in a food processor until finely chopped.
- Brown ground beef in a skillet (6–8 min). Add onion mixture and taco seasoning; cook until it starts to stick (6–8 min). Add water and stir until sauce thickens (2 min).
- Divide beef and cooked rice into bowls. Top with salsa, sliced avocado, tortilla chips, and shredded lettuce or cheese as desired. Serve.
