Ingredients

  • 1 large tomato chopped
  • ¼ medium red onion finely chopped
  • 1 jalapeño ½ finely chopped, ½ coarsely chopped
  • ¼ cup finely chopped cilantro
  • 3 tablespoons fresh lime juice
  • Kosher salt
  • 1 small yellow onion coarsely chopped
  • 5 garlic cloves coarsely chopped (slight reduction)
  • tablespoons extra-virgin olive oil
  • 1 pound ground beef 80/20 blend
  • 1 1-ounce packet taco seasoning mix
  • Cooked rice sliced avocado, tortilla chips, shredded lettuce, and lime wedges (for serving)

Instructions

  • Toss chopped tomato, red onion, jalapeño, cilantro, and lime juice in a bowl. Season with salt and set aside.
  • Pulse yellow onion, garlic, and remaining jalapeño in a food processor until finely chopped.
  • Brown ground beef in a skillet (6–8 min). Add onion mixture and taco seasoning; cook until it starts to stick (6–8 min). Add water and stir until sauce thickens (2 min).
  • Divide beef and cooked rice into bowls. Top with salsa, sliced avocado, tortilla chips, and shredded lettuce or cheese as desired. Serve.
