Ingredients
- 2 very ripe, heavily speckled bananas
- 3 large eggs
- 1/2 cup full-fat cottage cheese

Blend the Wet Ingredients Smooth
Preheat your oven to 350F. Grease a 9×5 inch loaf pan and line it with parchment paper, leaving an overhang on the sides to use as handles later.
In a blender, combine the ripe bananas, eggs, cottage cheese, dark brown sugar, melted butter, and vanilla extract. Blend on high until the mixture is completely smooth and aerated. There should be no visible curds from the cottage cheese.
Combine Dry Ingredients
In a large bowl, whisk together the almond flour, oat flour, baking soda, cinnamon, nutmeg, and salt. Whisking the dry ingredients together first ensures that the leavening and spices are evenly distributed throughout the batter.
Mix the Batter and Bake
Pour the blended wet ingredients into the bowl with the dry ingredients. Use a spatula to fold everything together until just combined. Be careful not to overmix. Fold in the toasted walnuts.
Pour the batter into the prepared loaf pan and smooth the top. Bake for ~50-60 minutes. The bread is done when a toothpick inserted into the center comes out clean or with a few moist crumbs attached. If the top is browning too quickly, you can tent it loosely with foil for the last 15-20 minutes of baking.
Let the bread cool in the pan for at least 20 minutes before using the parchment handles to lift it out onto a wire rack to cool completely.
