Cottage Cheese Banana Bread

This is a moist, dense banana bread that uses cottage cheese for texture and protein. This step is not optional; it prevents the final bread from having a chunky, curdled texture and ensures a uniform, tender crumb.

Ingredients

  • 2 very ripe heavily speckled bananas
  • 3 large eggs
  • 1/2 cup full-fat cottage cheese
  • 1/4 cup packed dark brown sugar
  • 1/4 cup unsalted butter melted
  • 2 tsp vanilla extract
  • 2 cups almond flour
  • 1/2 cup oat flour
  • 1 tsp baking soda
  • 2 tsp cinnamon
  • 1/2 tsp freshly grated nutmeg
  • 1 tsp Diamond Crystal kosher salt
  • 3/4 cup toasted walnuts roughly chopped

Instructions

  • Preheat oven to 350F. Grease 9x5 inch loaf pan and line with parchment, leaving overhang.
  • Blend bananas, eggs, cottage cheese, brown sugar, melted butter, and vanilla until completely smooth.
  • Whisk together almond flour, oat flour, baking soda, cinnamon, nutmeg, and salt in large bowl.
  • Fold wet ingredients into dry ingredients until just combined. Fold in walnuts.
  • Pour batter into pan and smooth top.
  • Bake 50-60 minutes until toothpick comes out clean. Tent with foil if browning too quickly.
  • Cool in pan 20 minutes, then remove to wire rack to cool completely.
