Ingredients (~6 servings)
- 1 large head cauliflower, cut into bite-sized florets (~6 cups)
- 2/3 cup mayonnaise
- 2/3 cup sour cream (good quality and thick, like Daisy brand)
- 1/3 cup sugar
- 1/2 tsp salt
- 1 cup shredded sharp cheddar cheese
- 5 slices bacon (~5 oz)
Cook the Bacon
Slice the bacon into 1/2 inch pieces and cook in a large skillet over medium heat until crisp.
This usually takes ~8-10 minutes depending on how thick your bacon is.
Drain on a paper towel lined plate and set aside.
Make the Dressing
In a small bowl, whisk the mayonnaise, sour cream, sugar, and salt together until smooth.
The sugar might clump a bit at first but it’ll dissolve as you whisk.
Combine Everything
Place the cauliflower florets in a large bowl.
Add the dressing and toss well until all the florets are coated.
Sprinkle in the shredded cheese and crumbled bacon, then fold everything together until well combined.
The salad is best served immediately, but you can also chill it for up to 2 hours before serving if you want it cold.

Cauliflower Salad
This is basically broccoli salad but with cauliflower – it’s got that same creamy, bacon-studded vibe that makes it disappear at potlucks. The sweet dressing balances out the sharp cheddar perfectly.
