Cauliflower Salad

This is basically broccoli salad but with cauliflower - it's got that same creamy, bacon-studded vibe that makes it disappear at potlucks. The sweet dressing balances out the sharp cheddar perfectly.

Ingredients

Ingredients (~6 servings)

  • 1 large head cauliflower ~6 cups, cut into bite-sized florets
  • 2/3 cup mayonnaise
  • 2/3 cup sour cream good quality and thick, like Daisy brand
  • 1/3 cup sugar
  • 1/2 tsp salt
  • 1 cup shredded sharp cheddar cheese
  • 5 slices bacon ~5 oz

Instructions

  • Cut cauliflower into bite-sized florets.
  • Slice bacon into 1/2 inch pieces and cook in a skillet over medium heat until crisp, about 8-10 minutes.
  • Drain bacon on paper towels and set aside.
  • Whisk together mayonnaise, sour cream, sugar, and salt until smooth.
  • Place cauliflower in a large bowl and toss with dressing until coated.
  • Add shredded cheese and crumbled bacon, then fold until combined.
  • Serve immediately or chill up to 2 hours before serving.
