Ingredients (~6-8 servings)
- ~2 1/2 lbs thick asparagus spears, tough bottom ends trimmed
- 3 Tbsp olive oil
- 1 1/2 Tbsp minced garlic
- Salt and freshly ground black pepper
- 3/4 cup finely shredded parmesan cheese
- Lemon wedges for serving
Preheat Oven and Make Garlic Oil
Preheat your oven to 400F.
In a small bowl, stir together the garlic and olive oil using a spoon; Press the garlic against the sides of the bowl to extract some of the juices and infuse the oil with flavor.
This step makes a big difference – you’re not just coating the asparagus with oil, you’re coating it with garlic-flavored oil.
Coat and Season the Asparagus
Place the asparagus on a rimmed baking sheet in a mound, then pour the garlic mixture over top.
Toss and rub the spears to evenly coat everything.
Spread into a single layer on the baking sheet – if you need to fit them all, place a row horizontally and a couple rows vertically.
Sprinkle evenly with salt and pepper to taste.
Roast Until Tender, Then Add Cheese
Roast in the preheated oven until tender, about ~15 minutes.
The asparagus should give slightly when pressed but not be mushy.
Remove from oven and sprinkle the cheese evenly over the top; Return to oven and roast for ~1 minute longer, or until the cheese has melted and is just starting to get golden.
Serve immediately with lemon wedges for spritzing over the top.

Roasted Parmesan Asparagus

- Preheat oven to 400F.
- Mix garlic and olive oil in a small bowl, pressing garlic against sides to release juices.
- Place asparagus on rimmed baking sheet and pour garlic oil over top.
- Toss to coat evenly and spread in single layer.
- Season with salt and pepper.
- Roast 15 minutes until tender.
- Sprinkle parmesan evenly over asparagus and return to oven for 1 minute until cheese melts and starts to brown.
- Serve immediately with lemon wedges.
