Easy Roasted Carrots

Stuff You Need

  • 2 pounds medium carrots, peeled and cut on a deep diagonal into ½-inch slices
  • 1½ tablespoons extra-virgin olive oil
  • 1 teaspoon chopped fresh thyme leaves
  • Kosher salt
  • Freshly ground black pepper
  • 1 tablespoon unsalted butter, cut into pieces

Prep the Carrots

Preheat oven to 400°F.

In a large bowl, toss the carrots with olive oil and thyme.

Season generously with kosher salt and black pepper.

Arrange and Roast

Spread the carrots in a single layer on a large rimmed baking sheet. Scatter butter pieces evenly over the top.

Roast, stirring occasionally, until tender and browned, ~40 minutes.
