Ingredients

  • 3 russet potatoes about 1½ lb., unpeeled, each cut lengthwise into 8 wedges
  • ¼ cup extra-virgin olive oil
  • ½ tsp. paprika
  • ¼ tsp. garlic powder
  • –¼ tsp. cayenne pepper
  • Kosher salt and freshly ground black pepper

Instructions

  • Preheat oven to 450°F.
  • Toss potato wedges with olive oil, paprika, garlic powder, cayenne, salt, and pepper.
  • Arrange in a single layer on a foil-lined baking sheet.
  • Roast, turning once, until golden and tender, 30 to 35 minutes.
