Ingredients

russet potatoes
about 1½ lb., unpeeled, each cut lengthwise into 8 wedges

extra-virgin olive oil

Kosher salt and freshly ground black pepper
Instructions
Preheat oven to 450°F.
Toss potato wedges with olive oil, paprika, garlic powder, cayenne, salt, and pepper.
Arrange in a single layer on a foil-lined baking sheet.
Roast, turning once, until golden and tender, 30 to 35 minutes.
