Slow Cooker Garlic Mashed Potatoes

This is a wicked simple way to make mashed potatoes without babysitting a pot on the stove. The slow cooker does all the work while you handle other stuff, and the garlic gets mellow and sweet after hours of cooking.

Ingredients

Ingredients (~6-8 servings)

  • ~3 lbs red potatoes peeled or unpeeled, cleaned and cut into 1 1/2-inch pieces
  • 1/2 cup water
  • 3/4 tsp salt or to taste
  • 1/2 tsp pepper or to taste
  • 1 Tbsp minced garlic 3-4 cloves
  • 1/4 cup butter melted
  • 1/2 cup sour cream
  • 1/3 cup heavy cream warmed in the microwave
  • 1/3 cup milk or as needed, warmed in the microwave
  • Minced chives and extra butter for serving optional

Instructions

  • Spray 6-7 quart slow cooker with non-stick spray.
  • Add potato chunks and pour water over top.
  • Toss with salt and pepper, add garlic, and pour melted butter over everything.
  • Cover and cook on high for 4 to 4 1/2 hours until potatoes are completely tender.
  • Mash potatoes in slow cooker with all cooking liquid using potato masher.
  • Add sour cream and warmed heavy cream.
  • Use hand mixer to whip, gradually adding warmed milk until desired consistency.
  • Taste and adjust salt and pepper.
  • Serve warm with butter and chives if desired.
