Slow Cooker Chili

Ingredients

Main Ingredients:

  • 2 pounds ground beef or ground turkey
  • 1 7-ounce can diced green chiles
  • 2 15-ounce cans dark red kidney beans, drained and rinsed
  • 1 15-ounce can light red kidney beans, drained and rinsed
  • 2 14-ounce cans crushed tomatoes
  • cups water or beef stock

Seasonings:

  • tablespoons chili powder hold back ½ tablespoon for milder heat
  • tablespoons onion powder
  • 1 tablespoon garlic powder
  • 1 tablespoon granulated sugar
  • teaspoons dried oregano
  • teaspoons smoked paprika
  • teaspoons cumin powder
  • 1 teaspoon salt

Optional Toppings:

  • Sour cream
  • Shredded cheese
  • Sliced green onions
  • Sliced jalapeños

Instructions

  • Brown ground beef over medium-high heat. Drain fat.
  • Transfer beef to slow cooker. Add chiles, beans, tomatoes, water or stock, and seasonings. Stir to combine.
  • Cover and cook on LOW for 4 to 6 hours.
  • Stir. Adjust seasoning with salt and pepper.
  • Thin with water or broth if too thick; remove some liquid if too thin.
  • Chili will thicken as it rests.
